I'm a cook based on Oʻahu with over 15 years of experience behind the line. Like many chefs and home cooks here, I’ve faced the challenge of finding high-quality knives without a huge price tag — and without having to settle for the limited selection available on island.
That’s why I started this shop. I work directly with skilled blacksmiths and knife makers in Japan and China to import a curated selection of handcrafted blades made from some of the highest-quality steels each country has to offer. Each knife is carefully chosen for its performance, durability, and craftsmanship — tools I wish I had access to when I was starting out.
I know Chinese knives sometimes get a bad reputation for quality — but I personally test every knife before I bring it into the shop. I would never sell anything I wouldn’t use in my own kitchen. In fact, over the past five years, I’ve sold more than 200 Chinese chef knives to fellow cooks who trust their performance.
