Japanese Knife Types Explained: Gyuto, Santoku, Nakiri, Bunka, and More
Gyuto
Main use: General-all purpose chef’s knife for vegetables, meat, fish, and everyday prep.
Geometry: Long, relatively narrow blade with a pointed tip. Most gyutos have some curvature toward the tip, allowing push cutting, slicing, and limited rocking.
Note — Traditional Japanese cutting generally relies more on push cutting, slicing, straight chopping, and long drawing strokes which is why western made knives typically have deeper blades.
Typical length: 180–270 mm, with 210 mm and 240 mm being the most common.
Thickness: Usually thinner and lighter than a Western chef’s knife, although workhorse-style gyutos can be thicker.
Best cutting motion: Push cutting, slicing, draw cutting, and gentle rocking.
Strengths: Versatile, efficient for larger ingredients, and suitable for most kitchen work.
Limitations: Not intended for bones, frozen food, or heavy twisting.
Best suited for: Most home cooks and professional cooks who want one primary knife.
Bunka
Main use: General-purpose prep for vegetables, boneless meat, herbs, and smaller ingredients and intricate cutting. Normally shorter than gyuto knives
Geometry: The bunka typically has a relatively flat cutting edge, a tall blade, and a sharply angled K-tip. The flatter profile works well for push cutting and chopping, while the K-tip provides added precision for detailed cuts. Usually shorter than a gyuto and more compact on the cutting board.
Typical length: 165–195 mm, commonly 170–180 mm.
Thickness: Usually thin behind the edge, with enough blade height for vegetable work.
Best cutting motion: Push cutting, chopping, and precise tip work.
Strengths: Compact, agile, visually distinctive, and excellent for detailed cuts.
Limitations: The fine k-tip can be easier to damage than a rounded tip. The shorter blade length is less efficient for large ingredients.
Best suited for: Cooks who want santoku-like versatility with a sharper, more precise tip.
Santoku
Main use: General-purpose preparation of vegetables, meat, and fish.
Geometry: Shorter, taller blade with a relatively flat edge and rounded or sheep’s-foot-style tip.
Typical length: 150–180 mm, commonly 165 or 170 mm.
Thickness: Usually thin and lightweight.
Best cutting motion: Push cutting, chopping, and straight downward cuts.
Strengths: Compact, easy to control, and comfortable in smaller kitchens.
Limitations: Less blade length for large ingredients and less tip reach than a gyuto.
Best suited for: Home cooks who prefer a shorter, manageable all-purpose knife.
Nakiri
Main use: Vegetable preparation.
Geometry: Tall, rectangular blade with a mostly flat cutting edge and a blunt-looking front.
Typical length: 150–180 mm, commonly 165 mm.
Thickness: Usually thin behind the edge for efficient vegetable cutting.
Best cutting motion: Straight chopping, push cutting, and controlled slicing.
Strengths: Excellent board contact, good knuckle clearance, and efficient for vegetables.
Limitations: Limited tip utility. Not intended for bones, joints, or heavy cleaver work.
Best suited for: Cooks who prepare large amounts of vegetables.
Important note: A nakiri may resemble a small cleaver, but it is generally much thinner and should not be used like a heavy meat cleaver.
Petty
Main use: Small-detail work, trimming, peeling, garnishing, and preparing small ingredients.
Geometry: Short, narrow blade with a pointed tip.
Typical length: 90–150 mm, commonly 120–150 mm.
Thickness: Usually thin and lightweight.
Best cutting motion: Short slicing strokes, tip work, trimming, and in-hand work when appropriate.
Strengths: Precise, maneuverable, and useful when a chef’s knife feels too large.
Limitations: Too short for large ingredients and less efficient for extended board work.
Best suited for: Detail work and use as a companion to a gyuto or santoku.
Paring
Main use: Peeling, trimming, coring, garnishing, and other small precision tasks.
Geometry: Very short, narrow blade with a pointed tip, designed for close control rather than large board work.
Typical length: 75–100 mm, commonly around 80–90 mm.
Thickness: Usually thin and lightweight for maneuverability and precise cutting.
Best cutting motion: Short slicing strokes, controlled tip work, and in-hand cutting.
Strengths: Excellent control for detailed work, peeling, trimming small ingredients, and making precise cuts where a larger knife would feel too large.
Limitations: Too short for larger ingredients, extended slicing, or most general-purpose board work.
Best suited for: Cooks who want maximum control for small ingredients and detailed prep tasks.
Honesuki
Main use: Breaking down poultry, trimming joints, and separating meat from bone.
Geometry: Compact triangular blade with a pointed tip and thicker spine than most general-purpose Japanese knives.
Typical length: 135–180 mm, commonly 150 mm.
Thickness: Relatively thick and rigid for controlled poultry butchery.
Bevel: Often double-bevel with an asymmetric grind, such as 70/30, although construction varies.
Best cutting motion: Short controlled cuts around joints and along bones.
Strengths: Excellent tip control and rigidity for poultry fabrication.
Limitations: Not a bone chopper. It should cut around joints rather than through hard bone.
Best suited for: Cooks who regularly break down whole chickens or other poultry.
Deba
Main use: Fish butchery, removing heads, cutting through small fish bones, and filleting whole fish.
Geometry: Thick, heavy blade with substantial spine thickness and a pointed tip.
Typical length: 120–210 mm, with 150–180 mm common for general fish preparation.
Thickness: Much thicker and heavier than most Japanese kitchen knives.
Bevel: Traditionally single-bevel and handed.
Best cutting motion: Controlled slicing, fish breakdown, and deliberate cuts through small fish bones or joints.
Strengths: Powerful, stable, and purpose-built for whole-fish preparation.
Limitations: Not a general-purpose cleaver and not intended for large animal bones. Single-bevel geometry requires specialized technique and sharpening.
Best suited for: Cooks who regularly process whole fish.
Yanagiba
Main use: Slicing sashimi, sushi toppings, and boneless fish.
Geometry: Long, narrow blade with a pointed tip and very little edge curvature.
Typical length: 210–360 mm, commonly 270–300 mm.
Thickness: Relatively thick at the spine but carefully ground for smooth slicing.
Bevel: Traditionally single-bevel and handed.
Best cutting motion: One long drawing stroke from heel to tip.
Strengths: Produces smooth, clean slices with minimal sawing or surface damage.
Limitations: Not designed for chopping, rocking, bones, or general-purpose preparation.

Usage: The long length of the blade allows you to complete a slice in a single pulling motion rather than moving the knife back and forth. This creates a smooth clean cut with no jagged edges on the fish.
Sujihiki
Main use: Slicing cooked or raw boneless meat, fish, roasts, and large proteins.
Geometry: Long, narrow, double-bevel blade similar in function to a Western slicing knife.
Typical length: 240–330 mm, commonly 270 mm.
Thickness: Usually thin and relatively lightweight to reduce drag.
Best cutting motion: Long drawing or pulling strokes.
Strengths: Clean slices, less tearing, and more versatility than a single-bevel yanagiba.
Limitations: Not suitable for chopping, bones, or dense board work.
Best suited for: Carving roasts, portioning proteins, and cooks who want a double-bevel slicing knife.
